NEW, elegant, impressive.
Hester Creek's inaugural release sparkling Blanc de Blanc is made entirely from old vine Pinot Blanc grapes from the estate's Golden Mile Bench vineyard.
It was whole cluster pressed and the resulting juice was cold settled for four days then racked to a stainless steel tank for primary fermentation. After a 12 day fermentation the wine was racked off the heavy lees and further aged in stainless on the fine lees. The base wine was laid down for 24 months to develop the classic traditional method autolytic characters. Following riddling and disgorging, the winemaker added a proprietary dosage to the finished product.
It's an impressive first go; red apple peel and the flesh of yellow apples, lemon curd and honeycomb aromas are underscored by orchard blossoms and rising bread dough. Dry and mouthfilling, it has a creamy complexity and juicy apple and lemon flavours.
It's also elegant and persistent. A lovely contribution to BC's serious bubbly programs.
